Kolkata, 31st March 2025 : The LaLiT Great Eastern Kolkata is all set to launch ‘Kabul to Kolkata,’ an extraordinary culinary experience with a bespoke set of Mughlai dishes served at Alfresco. This royal feast, curated by our gifted Executive Chef Sunayan Pramanik will be served from March 10 to June 10.
The Lalit believes in unifying people and cultures through its food, and with this festival we attempt to make our patrons experience the legacy of Mughlai cuisine tracing its journey from Kabul, Peshawar, Lahore, and Delhi, to Kolkata.
Mughlai cuisine, widely celebrated for its rich, aromatic gravies, succulent meats, slow-cooked delicacies, and fragrant rice preparations, has been shaped by centuries of Persian, Turkic, and Indian influences that charts a legacy of emperors. The cuisine is infused with the grandeur of Awadhi kitchens and the robust flavours of frontier regions. Understanding this sophisticated history and reinterpreting it through a contemporary lens is the essence of ‘Kabul to Kolkata’.
Guests can savour exquisite dishes from this special menu, that is inspired by the distinct culinary styles of Afghanistan, Pakistan, and India, reflecting the deep-rooted connections between these regions. From Kabuli Pulao, Qorma e Nadru of Kabul to Lahori Nihari, Sindh Ke Choleyfrom Peshawar, Jama Masjid’s Tandoori Chicken from Delhi, and Metiabruz Gosht Biryani of Kolkata, each delicacy is prepared with meticulous attention to traditional cooking techniques and tells a tale of gastronomy that have transcended borders and eras.
